Best Banana Bread

'Round these parts we eat a lot of banana bread. It is a favorite snack or breakfast food. I wanted to share my super easy vegan recipe so you guys can have some of the fun too!

3 overripe bananas(check out the rotten rack at Nutrition Smart, they often have overripe organic ones for $.19/lb)
1/3 cup oil(anything light tasting is fine)
3/4 cup sugar/sweetener of your choice-- I often mix agave & raw sugar (use the $2/1 wholesome sweetener coup from the food & wine booklet to get a great deal on sugar!)
1 tsp vanilla
2 cups flour(I use a mix of spelt & wheat, or sometimes all spelt) all purpose is fine
1 tsp baking powder
1 tsp baking soda
2 tbsp hemp seed(optional but adds loads of nutrition!)
1 pinch of salt
1 tsp cinnamon

Optional topping-
1/3 cup oats
1/3 crushed nuts
3 tbsp raw sugar
1 tsp blackstrap molasses
3 tbsp oil

Preheat oven to 350 degrees.

Mash bananas very well, add sugar, oil, and vanilla and blend. Sift together dry ingredients and add to wet. Mix well- mixture will be thick but not dry. If it seems too dry I add another mashed banana. I add the hemp seed now if I am using it.

Pour into greased pan. You can use a bread pan or muffin tins(makes 12 muffins).

For optional topping- mix all ingredients well, being sure to incorporate the molasses. Top each muffin(or bread) with topping and pat down lightly.

Bake 45-55 mins for bread, 20-24 mins for muffins.

  3. YUMMMM!!!We make muffins at least twice a week around here and I almost always have some mushy bananas!M.K.
